Have you been to Le Saint Sebastien in Paris? If not, put it on the list. While it’s not what you’d expect, based on the name—tapas etc, you’ll find some hints of Spain and Latin accents. Food is precise and packed with flavor. But the list? If you love oxidative wines like me, this is one of the few spots where you can satisfy that itch in this city. So, take a look at this recent by-the-glass offering. After considering the Nowack champagne and the Domaine Chapel, I’d go directly to the section just ater cider. What would you do?
I regret not getting the Guillaume Overnoy because I’ve yet to taste his wines, and where do you ever see a vin jaune for 17 euros for a glass? (albeit a small one). But I was thrilled to see the Les Frères Soulier Vert de Gris. It’s shockingly grippy and deep. From underripe grenache gris, it has 3 years under flor with another in the bottle. With unsweetened honey, filled with lemon sun overripe acid, and a beautiful copper color. It’s a rare score. Give it a try.

I went to le Saint Sebastian last June upon David Leibovitz rec. I ended up sitting next to a lovely man who they were all fawning after bringing him glasses of wine to taste and judge. It ended up to be Jon Bonne and we had a lovely discussion that evening. He spoke of his upcoming book and his knowledge of my “Atlanta” scene.
