2019 Cuvée Eva

Where La Mancha, Spain Grape. Airen, Vijiriega. AgOrganic. SO2 None

Samuel Cano’s wines were a revelation for me. Check them all out if you can, but this Cuvée Eva was particularly attention-getting. Its grapes come from a small east-facing limestone co-planted plot. Everything is harvested and co-vinified at the same time. Usually, the maceration takes up to six days and then fermented in larger barrels, which takes a year of élevage before bottling. It was an active roller coaster of sensation. Whether the new vintage or 2014, it had a wild, sausage-forestry character, so unusual in white wine, that I was wild for. Probably around $30. No current US importer.

This starts in stainless steel and then goes into foudres. “One of the best ways to bring wines back to reality,” Théo told me.
