The personalities and flavors continue to pinch me into amazement with every visit to the country of Georgia, but there’s nothing like that first time in 2011. Then, I experienced a psychedelic-like virtual reality experience without the glasses. Fourteen years and twenty-five visits later, Georgia still moves me. The people are still warrior-like (as is their drinking), there are more swank hotels, fewer outhouse situations and natural wine has flooded the city of Tbilisi. And a rarity, this time I didn’t get sick. For that, I am grateful.
However, where you can imbibe natural wine is a fluid situation, most likely because of pressure from those representing conventional wineries.
For example, in 2024, Craft was the essential wine bar. In 2025? Hmmm. Communal used to have natural wine in their restaurants. Now? None.
For entirely different reasons, Gvinho Underground, the GOAT of the local natural wine bar genre, is having some wobbles. (In addition, their Instagram page is dusty. Hey guys, take back your presence!) Having been under siege during the intense protests of the winter they are working to get their edge sharpened once more. The food, under Lazare Wurdeman, however is elevated—first step. I’ve faith; this beloved spot will be turned around! There’s much love this institution and we’re all rooting for its victory.
